Rose Petal Jam
Easy recipe for Rose Petal Jam. This traditional recipe uses fresh, red rose petals right from your garden. Rose petals have been a popular flavoring through the ages. They have been used to flavor puddings, candy, drinks, preserves, and all kinds of other dishes.
The dark red, fragrant roses are best to use in your rose petal jam recipes. These are the most tastey, and flavorful. The delicate flavor varies in strength with the scent of the petals.

Use on toast, muffins, scones, or bread. For a special treat, try it on ice cream!
Pick fresh petals, that have not been sprayed. (Fallen petals are not recommended. Rose petals are perishable, and their flavor is quickly lost.)Remove the white bottom part of the petals with a knife or scissors, because that part is very bitter.
One medium size rose yields about a cup of petals.
Note Do not use rose petals from the florist, or garden center. Theses roses are not food grade. They may have been sprayed with dangerous pesticides!
Rose Petal Jam Recipe
You will need:
8 ozs. of Rose Petals (newly opened fragrant red ones)
1 Tablespoon fresh squeezed lemon juice
1 1/2 lbs. sugar
1 cup rose water
Make your own rose water
Wash and drain petals. Put rose water in saucepan. Add lemon juice and sugar. Stir to dissolve sugar.
Add the petals to the pan and leave in a warm place to steep. Cover and leave for a few hours or overnight.
Place pan on low heat and simmer gently for 30 minutes, stirring frequently, until the mixture thickens to a jamlike consistancy.
Allow to cool, put in small jars and cover. Enjoy!
